Q - What information and guidance is there for manufacturars of Evaporated Milk Products?

A - Under the established standard of identity for evaporated milk (21 CFR 131.130), this product must contain not less than 6.5% by weight of milk fat, not less than 16.5% by weight of milk solids not fat, and not less than 23% by weight of total milk solids. Each fluid ounce of the product must also contain 25 International Units of vitamin D. If vitamin A is added as an optional ingredient, each fluid once of the product must contain not less than 125 International Units of vitamin A.

The standard of identity for evaporated skimmed milk (21 CFR 131.132) requires that the food contain not over 0.5% by weight of milk fat unless otherwise indicated and not less than 20% by weight of total milk solids. Each fluid ounce of Evaporated skimmed milk also must contain 25 International Units of vitamin D and not less than 125 International Units of vitamin A.
